Spiced Quinoa with Cherries

For this month’s Taste and Create recipe swap, I was paired with Shell at The Bad Girl’s Kitchen. I decided on her Spiced Quinoa with Cherries because I thought it would be a great alternative to oatmeal for breakfast. And it was. It never occurred to me to use quinoa like this, but it’s just as versatile as oats! I’m thinking chopped apples or fresh blueberries would also be good in this. . .

Spiced Quinoa with Cherries

Ingredients:

1 cup quinoa
2 cups water
1 tsp cinnamon
honey
dried cherries (I used cranberries.)
sliced almonds or pecans or walnuts

Directions:

Put water in a medium saucepan to boil. Rinse quinoa in a fine mesh colander, and add to the water once it starts boiling. Turn down the heat, cover and simmer until the quinoa opens and most of the water is gone (about 15 minutes). Stir often so it doesn't stick.

Add all other ingredients in a big bowl with the cooked quinoa according to your taste.

Serves 3-4

Nat's Notes:
1. The original recipe called for about 1/3 c honey, but I thought that was WAY too sweet. Start with a tablespoon and add more until its as sweet as you like.
2. I didn't add measurements for the fruit or nuts either because I just ending up throwing a handful in. That's the beauty of this . . . do what you want :)
