Natalie! Hope you had a wonderful weekend, lady! Things have been getting real busy round these parts so anything that takes 30 minutes or less is pretty much what’s going on up in here. I love enchiladas almost as much as I love tacos :)

I have a butternut squash on the counter and tortillas in the fridge. Only thing I need is enchilada sauce… Have you ever made your own?
