Nope, you can use all spinach. I've done it several times. I can only find frozen kale at certain stores here, but I always have frozen spinach on hand.

I just saw this post through the top posts of 2014--I'm so sorry I missed it earlier, it looks amazing! Does anyone know if you can just double the spinach if you don't have any frozen kale on hand? Or do you need the kale for texture?

I eat Paleo so this was perfect for me!! Love that there is no cheese, or flour in it. Mine was not sturdy enough to pick up so I may have made it too thick, or maybe it's not meant to be picked up, but regardless I will pull out my fork for this one any day! I topped mine with tomato sauce, tomatoes, mushrooms, bell peppers and green onions. Put an egg fried in coconut oil on top, yum! Thanks for sharing :)

I LOVE the idea of using greens (especially which is going crazy in our garden right now!!) for a pizza crust! I'm excited to try this recipe out. Since I would be using fresh kale, any thoughts on how to modify the recipe? Saute some chopped fresh kale at the beginning? Should I start with a pound of kale?
I'm also so excited that you are back!! I completely understand why you needed some time off, but (selfishly!) I so enjoy getting your regular posts in my inbox once again! I appreciate your creative and healthy recipes, and always enjoy your humor! Thanks so much!
