@Tenneil Harms, thanks for this info! I now have this recipe on my regular rotation thanks to your response. I eat mostly plant-based, so I use an egg (white) replacer for the egg white. I also have a little tip for the flipping procedure: I prep a second cookie sheet with parchment (usually ungreased) and I put that on top of the flatbread once I&#039;ve run a spatula underneath it to be sure it&#039;s not sticking. Then I carefully flip the flatbread onto the new parchmented cookie sheet, and slip it back into the oven. Much easier than trying to flip something hot and partially cooked!]]></description>

I didn&#039;t have tapioca flour, so I just ground up some almonds and used the powder instead. Also, I am on a low-carb, gluten free, vegan - lifestyle. So, I used chia seeds and a little oats flour instead of the egg and vegan cheese instead of the mozzarella. I make different kinds of gluten free bread everyday and sometimes I do get bored of having to roll them one by one. I am simply delighted that this recipe worked for me - it cut both my cooking and cleaning time a lot. So, this is a sure winner - it&#039;s going to be a staple in my kitchen. Thanks so much! Oh I did make a small portion with grated carrot and it turned out just as good.]]></description>
