I'm sorry they still came out flat for you! Alternative baking can be so finicky. Maybe try adding a little more (maybe 1/4 cup?) almond flour to thicken up the batter next time?

I have the cookbook and followed this recipe and mine came out completely flat. Then I thought I should omit the almond milk and they still came out pretty flat. The flavor is perfect, however!!!! What do you think I could be doing wrong? I don't even get the opportunity to flatten the cookies with a fork because they have already gone flat. What to do?

Yes it's 1:1. I find that Swerve doesn't have that weird cooling sensation. I like Xylitol, too, and it's easier on my stomach. It doesn't have that taste either.

Is the erythritol substitution 1:1 for the coconut sugar? Do you have a recommendation on a brand that doesn't have an odd aftertaste? I am new to low-carb baking. Thanks.

I love the flavor of these but mine do not look like the picture! The dough is the color of a ginger snap cookie (the color of my coconut sugar) What could account for this? Do I need a different kind of coconut sugar?
