Easter Leftovers (The Ham & Eggs Post)

Come Monday you’ll probably be swimming in leftover ham and eggs. Right?

Not us. If all goes well, we’ll be swimming in leftover salmon and eggs. Is eating salmon on Easter allowed? It is here. Along with fish tacos on Christmas. We’re weird.

Actually we’re just not big ham eaters, aside from the occasional package of uncured deli ham.

So, if you ARE swimming in ham and eggs, here are a few suggestions for you. . .

Tuscan Bean Soup - This recipe has been on my site since the very beginning. Until now it hasn’t had a photo, which is ridiculous because I’ve made it a dozen times probably. It’s super easy and a great way to use leftover ham. Not to mention easy on the waistline!
Now for all of those eggs you painstakingly dyed in order to hide them in the backyard from your children. (I wonder how traditions like this get started?)

Green Bean and Egg Salad with Goat Cheese Dressing – This one has been around for a while, too, but the photo was horrible. I found that mixing the whole salad together with the dressing did NOT a pretty salad make. I’ve been thinking about this salad for a couple of weeks, and I’m so glad I made it again. I love the goat cheese dressing. LOVE. IT.
Have a whole lot of hard-boiled eggs? The old egg salad standby is always nice. It never gets old for me. I especially like this Mayo-Free Egg Salad that uses plain yogurt in place of mayo.

    We always have lasagna on Easter. It's an Italitan tradition Jon picked up while on his mission.
