Chocolate Chip Cheesecake Bars
This is one of my favorite bar cookie recipes, combining two of my favorite desserts — chocolate chip cookies and cheesecake.
They’re easy to whip up. I like how it looks before you bake it with the filling . . . like a spotted cow. I try to get it as cow-like as I can. Just for kicks.
Psst . . . you can make a gluten-free version of these really easily by using this recipe for the cookie part. (It makes a bit more dough than you need, though.) And you probably wouldn’t have guessed, but these photos are the gluten-free version.
Chocolate Chip Cheesecake Bars
adapted from Taste of Home
2/3 c. butter
3/4 c. sugar
1/3 c. brown sugar
1 egg
1 ½ tsp. vanilla
1 ½ c. flour
1 tsp. salt
¾ tsp. baking soda
1 ½ c. mini chocolate chips
Filling:
2 pkg (8 oz each) cream cheese, softened
¾ c. sugar
2 eggs
1 tsp. vanilla
Cream sugar and shortening. Beat in egg and vanilla. Combine flour, salt and soda. Add to creamed mixture. Fold in chips. Set aside 1/3 of dough. Bake crust at 350 for 8 min in a greased 9×13 pan.
Beat cream cheese and sugar. Add eggs and vanilla. Spoon over crust. Place flattened discs of reserved cookie dough over cream cheese mixture. Bake at 350 for 35-40 min. Cool. Store in fridge.
Nat’s Notes:
1. The original recipe contained 3/4 c shortening in place of the butter. I avoid using shortening so I made the substitution.
