<p>I've got more meal plans for you! and I'm happy to be partnering with the coolest blogger I know -- Julia from <a href="http://theroastedroot.net">The Roasted Root</a>. Julia lives in the Reno/Tahoe area (where we used to live!) and is a vegetable wizard. I'm excited to send some of her recipes your way!</p>
<p>As a family, we aren't 100% paleo, but I find that when I start with paleo recipes and adapt it to the way we like it's much easier than trying to adapt a traditional recipe to be paleo-ish. I know you guys are wanting healthy, tasty recipes to feed your families, so know that these will be packed with lots of vegetables and fun flavors!</p>
<p>This week's meal plan is cozy and comforting, but won't weigh you down. It'll keep you going as you plan and prep and shop for the holidays. And there's a handy printable shopping list at the end!</p>

<p>Oh, friends. This week is so delicious. Whether you make  one or two or all of these recipes next week you'll be in for some delicious eats.</p>



<p>One of my favorite things about planning meals is carrying over similar ingredients to more than one recipe. It saves time (and money if that particular thing happens to be on sale!) and reduces waste! </p>



<p>We've done that this week using pesto a couple of times. If you're making your own pesto this will be super helpful for you.</p>



<p>Also, I'm dying over Julia's 7-Layer Magic Bars. I think I'll be making those this weekend. YUM.</p>

<p><a href="https://www.perrysplate.com/2014/04/paleo-butternut-squash-soup.html">INDIAN-INSPIRED BUTTERNUT SQUASH SOUP</a> -- This quick little soup has a hint of Indian spices, but what really makes this soup shine are the garnishes on top -- sliced green onions, toasted coconut, and roasted cashews are a must!</p>

<p><strong>Substitutions</strong>: This salad is so versatile! You can add toasted nuts &amp; seeds, grass-fed cheese crumbles, any leftover vegetable or protein to make it even more delcious. Use cauliflower rice if you want it to be completely grain-free. </p>

<p>Happy New Year!! </p>



<p>Whether you're a goal-setter or not, you have to admit that January feels like a fresh start. New planners, new calendars, new year.</p>



<p>I'm always craving fresh, healthy food in January after nose-diving in cheese, cookies, and chocolate during the holidays. Oy.</p>



<p>January is also when a LOT of people do a round of Whole30. I've done a round of Whole30 in January and it starts the year off well!</p>



<p>This week Julia and I have a veggie-loaded line up of <strong>WHOLE30 FRIENDLY RECIPES</strong> for you with fun, fresh flavors.</p>

<p><strong>Special Diet Note:</strong> This recipe is paleo as-is and Whole30 friendly without the cheese crisps.</p>



<p><strong>Prep Ahead</strong>: The bacon can be cooked and the vegetables roasted ahead of time.</p>



<p><strong>Substitutions:</strong> Use another 8 oz of mushrooms (baby bellas or some other flavor to add variety) in place of the dried mushrooms if you like. Roast them alongside the others.</p>

<p>Mid-January can be a rough time of year for a lot of people. </p>



<p>Are you one of those affected by SAD? (Seasonal Affected Disorder?)</p>



<p>I wasn't until we moved to Boise. The gray skies and reduced amount of sunlight started to affect me when we moved.</p>



<p>Lots of empathy over here if you're in that boat, too. And with everything going on in our country, (heck, the world) it adds an extra layer of heaviness on our hearts and minds.</p>



<p>Food doesn't solve all problems, but I know when we're giving our body what it needs it's better able to adapt to our environment. I know I feel better when I fuel my body well, no matter what's going on in my life. </p>



<p>I hope these meals give you a boost of nutrition and resilience during these dark and dreary weeks!</p>

<p>We made it through January! *fist bump*</p>



<p>This week's plan has a lot of bold flavors and bright colors! (Our faves!)</p>



<p>It was only a matter of time before I tossed a Salad Joe into one of these meal plans. Just trust me on this one and give it a shot. It's one of my favorite quick-prep dinners that my family never gets tired of.</p>



<p>While I was assembling this meal plan I realized I had never eaten Ropa Vieja. Julia's version looks totally delicious, so I think I'll make it next week! It's one of her most popular recipes.</p>



<p>I also pulled out an oldie -- the Thai Toasted Coconut Cashews. Has anyone ever made those? They're lightly sweetened with a hint of heat.</p>

With slow cooker and pressure cooker instructions, you can make this delicious recipe in either your crock pot or Instant Pot!</p>

<p><a href="https://www.perrysplate.com/2021/10/clam-chowder-with-bacon-dairy-free-gluten-free.html">CLAM CHOWDER WITH BACON</a> -- This clam chowder recipe is based on my Southern grandma's recipe. I made a few tweaks to make it gluten-free and even dairy-free, if you like! Bacon wasn't originally part of her recipe, but I think she'd approve. I also included instructions for stove top, Instant Pot &amp; slow cooker.</p>
