<h2 class="wp-block-heading">This Turkey Pumpkin Chili is perfect for fall</h2>



<p>If you're like me, you have your tried-and-true standbys for cozy fall nights -- favorite chili recipe and a few favorite soups, maybe? Do you ever feel like you're in a rut and want to branch out, but are unsure what to try? This is the perfect chili for you.</p>



<p>I've tried pumpkin chili recipes in the past that have tasted a little too pumpkin-y and pie-like. (My guess is too many baking spices?) I've remedied that and the spices in this soup are spot-on.</p>



<p><strong>Fun fact:</strong> This soup is a knock off recipe of the Pumpkin Chorizo Soup at Cafe Zupas -- our favorite soup/salad/sandwich chain here in the western US. They feature it every fall in the restaurant and now you can make it anytime you like!</p>



<h2 class="wp-block-heading">Why we love this Pumpkin Turkey Chili&nbsp;</h2>



<p>When you try this fun twist on a turkey chili, you'll be adding it to your yearly fall rotation! Most of the ingredients can be stashed in your pantry or freezer for soup. It's rich and hearty, and the pumpkin puree adds some creaminess and body. </p>



<p>This turkey chili has all the fall vibes and lands somewhere between a chili and a taco soup. Down below I've included suggestions for ingredient swaps, step-by-step instructions, and tips for storing and freezing! (Yep, it freezes, too!)</p>

<h2 class="wp-block-heading">Turkey Pumpkin Chili Recipe ingredients</h2>



<ul class="wp-block-list">
<li><strong>Onion</strong></li>



<li><strong>Garlic</strong></li>



<li><strong>Turkey Chorizo</strong> -  Make sure you aren't using Spanish chorizo which is firm like a pre-cooked sausage and not loose and crumbly like Mexican chorizo.</li>



<li><strong>Rotel tomatoes</strong> - I love these! If you haven't used them, they're canned diced tomatoes with green chiles added. </li>



<li><strong>Black beans</strong></li>



<li><strong>Pumpkin puree</strong> - Make sure this is plain, unsweetened pumpkin puree and not pumpkin pie filling.</li>



<li><strong>Frozen corn</strong> </li>



<li><strong>Chicken broth</strong></li>



<li><strong>Spices</strong> (cumin, smoked paprika). If you'd like to add a little heat, throw in a ¼ teaspoon cayenne pepper.</li>



<li><strong>Heavy cream</strong>  </li>



<li><strong>Garnishes (optional)</strong> - Avocado, cilantro, green onions, sour cream, shredded cheese, tortilla chips.</li>
</ul>



<h2 class="wp-block-heading">Pumpkin Turkey Chili Recipe substitutions</h2>



<ul class="wp-block-list">
<li><strong>Chorizo</strong> - You can use whatever type of Mexican style chorizo you prefer. I like turkey chorizo because it's less greasy than pork chorizo. <strong>If you'd like to use turkey chorizo, but can't find any, use 1 pound of ground turkey and add 3 Tablespoons of my <a href="https://www.perrysplate.com/2017/01/chipotle-copycat-chorizo.html">chorizo seasoning recipe</a>.</strong></li>



<li><strong>Rotel tomatoes</strong> - If you can't find them just use a couple cans of regular diced green tomatoes and a 4-ounce can of diced green chiles. Rotel tomatoes come in a smaller sized can than regular diced tomatoes, but the extra tomatoes won't affect the soup much if you need to use regular ones.</li>



<li><strong>Black beans</strong> - If you're avoiding beans, swap it out for more chorizo or extra vegetables (corn or zucchini would work well.)</li>



<li><strong>Frozen corn</strong> - Use drained canned corn if that's what you have. If you are avoiding corn, use some diced zucchini or another small, quick-cooking vegetable.</li>



<li><strong>Heavy cream</strong> - If you'd like to make this soup dairy free, use coconut cream. There are enough bold flavors in this soup to mask any coconut flavor.</li>
</ul>

<h2 class="wp-block-heading">How to make Turkey Pumpkin Chili</h2>



<ol class="wp-block-list">
<li>Cook the chorizo in a large soup pot over high heat until it begins to brown a little. Add the onion and garlic and cook for a few more minutes.</li>



<li>Add the tomatoes, beans, pumpkin, corn, broth and spices.</li>



<li>Bring to a boil, then simmer for about 20-30 minutes until the vegetables are cooked through and flavors have gotten all cozy together.</li>



<li>Stir in the cream and cook for a few more minutes.</li>



<li>Serve with garnishes.</li>

<h2 class="wp-block-heading">Serving Pumpkin Chorizo Chili</h2>



<p>I'm a garnish girl. I love sprinkling extra things on soup or whatever I'm eating. Garnishing this soup is completely optional since it's great on its own! </p>



<p>You can use anything you'd put in a taco soup. I loved it with chopped avocado, some green onions, and a sprinkling of cilantro. You could also add sour cream, shredded cheese, and crushed tortilla chips.&nbsp;</p>

<p>Once the soup has cooled down to room temperature, transfer it to a lidded container and store chilled for up to a week.</p>



<h3 class="wp-block-heading">Freeze it</h3>



<p>This soup freezes well, too! Let the soup cool to room temperature, then transfer it to some freezer safe containers. I've been using them for years to store soup, broth and miscellaneous leftovers in the freezer and fridge. </p>

		<ol><li data-step-index="0" id="mv_create_708_1">Heat the avocado oil in a large soup pot over high heat. Add onion and turkey chorizo, breaking the chorizo up into small bits as it cooks. Cook for about 15 minutes until the chorizo has started to brown a little and the onions have softened.</li><li data-step-index="1" id="mv_create_708_2">Add the cumin, smoked paprika, and cayenne (if using) as well as the minced garlic and let it cook for about a minute while you open the cans for the other ingredients. Add all the tomatoes (undrained), black beans, pumpkin puree, frozen corn, and 3 cups of chicken broth.</li><li data-step-index="2" id="mv_create_708_3">Bring the chili to a boil, then turn the heat to medium low and simmer for about 20 minutes, uncovered. </li><li data-step-index="3" id="mv_create_708_4">Stir in the heavy cream. Use the remaining chicken broth to adjust the texture of the chili, if you like. </li><li data-step-index="4" id="mv_create_708_5">Serve immediately and garnish with whatever you'd like! I loved topping my chili with sliced avocado, fresh cilantro, some corn chips, and a squeeze of lime juice.</li></ol>	</div>

			<p><ol><li>If you can&#x27;t find turkey chorizo, either use regular pork chorizo (might be a little greasier) or use a pound of ground turkey and 3 Tablespoons of my <a href="https://www.perrysplate.com/2017/01/chipotle-copycat-chorizo.html" target="_blank">chorizo seasoning</a> recipe. You&#x27;ll add the meat and the seasonings at the same time in step 1.</li><li>Rotel tomatoes are simply canned tomatoes with green chiles added. If you can&#x27;t find these, substitute another 15oz can of diced tomatoes with a 4oz can of diced green chiles.</li></ol></p>

<h2 class="wp-block-heading">Thai Curry Chicken Instant Pot Substitutions</h2>



<p><strong>Protein</strong> - You can swop chicken for beef (add 5 minutes to cooking time).</p>



<p><strong>Vegetarian</strong> - Use a can or two of chickpeas, lentils, or meat alternative.</p>



<p><strong>Vegetables</strong> - Feel free to use different vegetables you have in your kitchen. Try adding harder vegetables that will survive the pressure cooker; cauliflower, cabbage, kale, winter squash, and root vegetables usually do well. You could also stir in some smaller green beans, snow peas, red bell peppers or spinach at the end after everything else has cooked.</p>



<p><strong>Spice</strong> - You can use a spicier curry paste, or simply add sriracha or sambal oelek to your own portion.</p>



<p><strong>Fish sauce alternative</strong> - If you don’t want to use fish sauce, you could use soy sauce or Liquid Aminos.</p>



<p><strong>Coconut alternatives</strong> - Use heavy cream if you aren’t a coconut fan.</p>

<h2 class="wp-block-heading">How to Make Instant Pot Thai Curry</h2>



<ol class="wp-block-list">
<li>Sprinkle the chicken with a few generous pinches of sea salt and a few pinches of black pepper.</li>



<li>Turn your instant pot or electric pressure cooker to the Saute setting, and add the coconut oil to the pot. When the cooker has preheated, brown the chicken in two batches, flipping once or twice during cooking. The chicken does not need to be cooked all the way through. When you're finished, press "cancel" on the cooker.</li>



<li>Return all of the chicken to the pot along with the prepped onion, carrots, and potatoes.</li>



<li>In a small glass measuring cup, whisk together the curry paste, tomato paste, fish sauce, lime juice, and ½ teaspoon of salt. Pour the mixture over the chicken and vegetables. Add the chicken broth to the pot as well, and give everything a good stir.</li>



<li>Place the lid on the cooker, sealing it closed and ensuring the steam valve is set to "sealing". Set it to high pressure for 10 minutes. I always use the "manual" or "pressure cook" button.</li>



<li>When the pressure cooking cycle has finished, switch the steam valve is set to "venting" to release the steam from the pot.</li>



<li>Remove the lid and stir in the coconut cream. Taste, and add a little more salt if you feel it needs it.</li>
</ol>

		<ol><li data-step-index="0" id="mv_create_2_1">Sprinkle the chicken with a few generous pinches of sea salt and a few pinches of black pepper.</li><li data-step-index="1" id="mv_create_2_2">Turn your instant pot or electric pressure cooker to the Saute setting, and add the coconut oil to the pot. When the cooker has preheated, brown the chicken in two batches, flipping once or twice during cooking. The chicken does not need to be cooked all the way through. When you're finished, press "cancel" on the cooker.</li><li data-step-index="2" id="mv_create_2_3">Return all of the chicken to the pot along with the prepped onion, carrots, and potatoes.</li><li data-step-index="3" id="mv_create_2_4">In a small glass measuring cup, whisk together the curry paste, tomato paste, fish sauce, lime juice, and ½ teaspoon of salt. Pour the mixture over the chicken and vegetables. Add the chicken broth to the pot as well, and give everything a good stir.</li><li data-step-index="4" id="mv_create_2_5">Place the lid on the cooker, sealing it closed and ensuring the steam valve is set to "sealing". Set it to high pressure for 10 minutes. I always use the "manual" or "pressure cook" button.</li><li data-step-index="5" id="mv_create_2_6">When the pressure cooking cycle has finished, switch the steam valve is set to "venting" to release the steam from the pot.</li><li data-step-index="6" id="mv_create_2_7">Remove the lid and stir in the coconut cream. Taste, and add a little more salt if you feel it needs it.</li><li data-step-index="7" id="mv_create_2_8">Serve with side dish of your choice.</li></ol><p><strong>Stovetop Instructions:</strong> Follow steps 1-4 in a large, deep skillet over medium-high heat. Then bring the mixture to simmer, reduce heat to medium low and cook, covered, for 15-20 minute or until the potatoes and carrots are soft and the chicken is tender. Stir in the coocnut cream at the end.</p><p><strong>Slow Cooker Instructions</strong>: Put the chicken, vegetables, and the whisked mixture from step 4 into a 4-6 qt slow cooker. Cover and cook on low for 5-6 hours or until the potatoes and carrots are soft. Stir in the coconut cream at the end.</p>	</div>

<p>I've made homemade coconut milk, almond milk, and cashew milk before, but never pistachio milk. Spoiler: pistachio milk isn't any different.</p>
<p>I soaked the nuts like I do with almonds, then threw them into my <a href="https://amzn.to/2vgRhPG" rel="nofollow">Blendtec</a> with some fresh water...</p>

<p>I don't think I've ever talked about my nut milk bag on here. I got it from<a href="http://elliesbest.myshopify.com?afmc=perry10&amp;utm_campaign=perry10&amp;utm_source=leaddyno&amp;utm_medium=affiliate" rel="nofollow"> Ellie's Best</a> and it really is THE best nut milk bag I've ever used. It's big and sturdy and even stands up on its own while I'm pouring.</p>
<p>You can use it for nut milk or squeezing the water out of shredded zucchini/cauliflower or coffee. It makes it so much easier. And it cleans up well, too.</p>

<p>This is kind of an involved recipe, but it's nice that you can break the prep work into chunks. The pistachio milk will keep for about a week in the fridge. And the ice cream base will keep chilled for a few days, too.</p>

<p>I don't say this often, but one of my favorite things about this ice cream is that my kids didn't like it. (Well, except for my "mustachio"-loving 3-year-old.) It's something I can pull out for Steve and me and we can take our time with it and not open the freezer after the kids have gone to bed to find that they've already eaten it.</p>

		<ol>
 	<li data-step-index="0" id="mv_create_518_1">If your pistachios are salted, give them a good rinse. Put the nuts in a small heat-safe bowl and pour very hot water over them. Let them soak for at least 30 minutes or up to 2 hours.</li>
 	<li data-step-index="1" id="mv_create_518_2">Drain the pistachios, discard soaking liquid, then put the nuts in a high-speed blender along with 4 cups of fresh water. Blend for 2-3 minutes until the nuts are completely pulverized and the liquid has turned to a creamy light green. Strain the milk through a nut-milk bag or a coffee filter or a paper towel-lined fine mesh strainer. You can save the pistachio pulp for another use (energy bites?) or discard it. (Don't put your strainer away. You'll need it again.)</li>
 	<li data-step-index="2" id="mv_create_518_3">Place the pistachio milk in a medium saucepan and add the granulated sweetener. Cook over medium-low heat, stirring often, until it gets steamy and the sweetener has dissolved -- do not boil.</li>
 	<li data-step-index="3" id="mv_create_518_4">Meanwhile, put the egg yolks in a small mixing bowl. When the milk mixture has heated, slowly whisk a ladle full of the hot liquid into the yolks. Then whisk the yolk mixture back into the milk mixture.</li>
 	<li data-step-index="4" id="mv_create_518_5">Cook over medium low for another few minutes until the ice cream base has thickened slightly, lightly coating the back of a spoon. Turn off the heat and stir in the vanilla stevia, vanilla extract, and coconut cream. Stir for a minute or so until the coconut cream melts.</li>
 	<li data-step-index="5" id="mv_create_518_6">Strain the mixture again through a fine-mesh strainer -- if you want. This ensures that you don't have bits of scrambled egg yolk in your ice cream. Chill the mixture for at least 2 hours.</li>
 	<li data-step-index="6" id="mv_create_518_7">Freeze the ice cream mixture in your ice cream maker according to the manufacturer's instructions.</li>
 	<li data-step-index="7" id="mv_create_518_8">Serve. With some extra chopped pistachios, if you like.</li>

			<p><p>Nat's Notes:<br /><br />1. You can absolutely make the pistachio milk a few days before you make the ice cream base. And you can leave the ice cream base in the fridge for a couple of days before you freeze it. This doesn't have to be an all-day project. Space it out how you like!</p><p><br />2. I used Swerve granulated sweetener in this recipe. You could use another low-carb sweetener like erythritol or all stevia. Coconut sugar or honey would also work well in this recipe if you aren't watching your carbs, but still wanted to use a natural sweetener.</p><p><br />3. Putting ½ teaspoon spirulina powder into the base will make it more green -- like commercially-made pistachio ice cream -- without needing food coloring. Just whisk it into the base at the very end in step 5 when you add the vanilla extract.<br /></p><p><strong>Nutrition info (per 1 cup serving): 109 Calories | 9.8g Fat | 1.8g Net Carbs | 3.3g Protein</strong></p></p>

<p>This is another recipe from Carolyn Ketchum's newest book, <a href="https://amzn.to/2NicHE4" rel="nofollow">Easy Keto Desserts</a>. She is a serious cookbook-producing machine! This is her third cookbook in less than a year. (Can you hear my head exploding?)</p>
<p>This one does have dairy, but I included some paleo modifications in the recipe notes if you're off dairy and aren't into low-carb sweeteners.</p>

<p>These little cups have a creamy, bright lime flavor, which I love, but my favorite part is the candied pecan crumble on the top. Er... bottom, when you flip them around to eat them.</p>

<p>Another good thing about these is that they can hang out in the freezer and wait until you're ready to eat them. They don't dry out on the counter and "force" you into eating more than you need to by glaring at you all day as you go in and out of the kitchen.</p>
<p>I can see lemon or orange versions being good, too! Or a MEYER LEMON one. I'm totally going to try that the next time I see them pop up in the grocery store.</p>

 	<li data-step-index="0" id="mv_create_515_1">Line 6 standard-sized muffin cups with paper or silicone liners.</li>
 	<li data-step-index="1" id="mv_create_515_2">In a medium bowl, beat the cream cheese and ¼ cup of the powdered sweetener with an electric mixer until smooth. Beat in the lime juice.</li>
 	<li data-step-index="2" id="mv_create_515_3">In another bowl, beat the cream with the remaining 2 Tablespoons of powdered sweetener until it holds stiff peaks. Fold the whipped cream into the cream cheese mixture until well combined. Divide the mixture among the lined muffin cups, filling each cup to the top.</li>
 	<li data-step-index="3" id="mv_create_515_4">Melt the butter in a small skillet over medium heat. Add the pecans and the granulated sweetener and cook for 5-7 minutes, until the pecans are toasted and fragrant. Sprinkle with the salt, then remove from the heat and let cool for 5 minutes.</li>
 	<li data-step-index="4" id="mv_create_515_5">Sprinkle the pecan mixture over the lime mixture in the muffin cups, pressing lightly to adhere.</li>
 	<li data-step-index="5" id="mv_create_515_6">Freeze for 3-4 hours, until set. Invert the pies onto a plate and remove the liners before serving.</li>

			<p><p>Nat's Notes:<br /><br />1. If you freeze these for longer than 6 hours they'll become very hard, but soften when you let them sit on the counter for 20-30 minutes before serving.<br />2. If you're not keto and you'd rather not use low-carb sweetener, replace both sweeteners with an equal amount of honey or pure maple syrup. I wouldn't recommend using coconut sugar in the filling because it will be grainy, but it would be fine to use it with the nuts.<br />3. <p>Easy frozen blender desserts are a huge favorite around here -- especially on weeknights! The very first thing I made in my Blendtec blender years ago was this <a href="https://www.perrysplate.com/2014/02/paleo-chocolate-ice-cream.html">Paleo Chocolate Ice Cream</a>. Instant hit! I think we made it almost every day for a while.</p>



<p>You only need a few ingredients for this, too! (I'll show you below!) I can whip up a batch of this paleo strawberry ice cream before the kids clear the dinner dishes.</p>



<p>I could also eat the entire pitcher and watch an episode of Bones, too, because sometimes those after-dinner chores take, like, and hour to do. Kids, man.</p>

<h2 class="wp-block-heading">Why this Paleo Strawberry Ice Cream Recipe WORKS:</h2>



<p>You know how sometimes you make something with frozen strawberries and it falls flat? Like the strawberry flavor tastes… bored. But you don’t exactly know how to fix it?</p>



<p>My recipe uses a little secret ingredient to fix this issue – orange juice. This does two things: 1. Adds some acidity to brighten the strawberry flavor without making it taste orangey. 2. Adds some natural sweetness so you can use less sweetener elsewhere.</p>

<h2 class="wp-block-heading">What You Need to Make this Paleo Strawberry Dessert:</h2>



<ul class="wp-block-list">
<li><strong>Frozen strawberries</strong>: You can use pre-frozen strawberries or fresh ones that you froze yourself. They need to be frozen for this recipe to work well. Otherwise you end up with a smoothie.</li>



<li><strong>Coconut Cream</strong>: This adds that nice hit of creaminess. You can find unsweetened coconut cream in the Asian aisle. The coconut cream you see in the mixed drinks aisle is full of sugar. (Also delicious, but just a heads up in case you’re wanting to control the sugar.)</li>



<li><strong>Coconut milk or almond milk</strong>: Or even dairy milk, if you’re not avoiding dairy.</li>



<li><strong>A large orange:</strong> The secret weapon. You can also use store-bought orange juice.</li>



<li><strong>Medjool dates</strong>: I use dates for this because it’s a good natural sweetener that also adds a little more body to the ice cream. Feel free to use any natural sweetener you prefer (maple syrup, stevia) or regular granulated sugar.</li>



<li><strong>Vanilla extract</strong>: Yes, please! Measure with your heart.</li>



<li><strong>Ice cubes</strong>: Just a few.</li>

<h2 class="wp-block-heading">How to Make Strawberry Paleo Ice Cream</h2>



<ol start="1" class="wp-block-list">
<li>Put the coconut cream, milk, orange juice, dates, and vanilla in a high-powered blender and blend until smooth.</li>



<li>Add the strawberries and ice cubes. If your blender pitcher has measurements on the side, fill it with strawberries to the 3 cup mark and the ice to the 4 cup mark.</li>



<li>If your blender has presets, use the ice cream setting to blend everything together. You may have to run the preset more than once and push all of the frozen bits down to the bottom between blending. If your blender has a hard time getting everything smooth, add ¼ cup more milk.</li>



<li>Serve.</li>

<h2 class="wp-block-heading">Tips for Making Paleo Strawberry Ice Cream</h2>



<p>This recipe works best if you have a high-powered blender like a Blendtec or Vitamix. You'll need to add more milk to get it to blend if you have a regular blender and it won't be quite as thick and soft-serve-like, but it'll still be tasty.</p>



<p>I have a Blendtec, and I run the "Ice Cream" program two or three times to get this blended, usually scraping down the sides between every cycle. I don't have a Vitamix, so I'm not familiar with how to do this the best way. It does need a pretty high speed, though, to smooth out all of that ice.</p>



<p>Afterward you can even pop it in the freezer for an hour or so in a freezer safe container to thicken it up. But if you leave it in there for too long, it'll get rock hard. Then you'll have to let it sit out for a while before you can scoop it. (Just don't forget about it or it'll melt and get soupy, and it won't recover after that.</p>



<p>(Ah, the dance we do with food to get JUST the right temperature.)</p>

<p>Amazing, right? The first time I made a dessert like this in my <a href="https://amzn.to/2InIdRK" rel="nofollow">Blendtec</a>, it totally made that bigger price tag worth it. It can blend such thick, frozen stuff without needing a lot of extra liquid. It's witchcraft.</p>

<p>You could totally change up the fruit in this! Just make sure it's frozen so the consistency is the same. Mixed berries would be fabulous! Or even mangoes -- a creamier version of my <a href="https://www.perrysplate.com/2014/07/5-minute-mango-sorbet.html">5-Minute Mango Sorbet</a>.</p>

		<ol><li data-step-index="0" id="mv_create_503_1">Put the coconut cream, milk, orange juice, dates, and vanilla in a high-powered blender and blend until smooth.</li><li data-step-index="1" id="mv_create_503_2">Add the strawberries and ice cubes. If your blender pitcher has measurements on the side, fill it with strawberries to the 3 cup mark and the ice to the 4 cup mark.</li><li data-step-index="2" id="mv_create_503_3">If your blender has presets, use the ice cream setting to blend everything together. You may have to run the preset more than once and push all of the frozen bits down to the bottom between blending. If your blender has a hard time getting everything smooth, add ¼ cup more milk.</li><li data-step-index="3" id="mv_create_503_4">Serve.</li></ol>	</div>

<p>My 5-year-old was home from school that day so I put her to work. I can’t believe how lanky she’s getting. Those arms, man. And it still surprises me how fair she is since I’m rather dark and my husband is a quarter Mexican with jet black hair and olive skin — the only blonde-haired, blue-eyed member of our family. Our little ball of recessive genes.</p>

<p>OK, don’t hate me for this, but splitting the eggs and whipping the egg whites separately is really the best option for waffles. If you REALLY don’t want to do it, you can just put them in whole, but I feel like the waffles are floppier that way and don’t have as much fluff.</p>
<p>Also, I can usually get an extra waffle or two out of the batch because whipped egg whites creates more volume in the batter.</p>

<p>I swear, I’ve been making waffles for most of my life and almost every batch will have at least one waffle that spills out the sides. *facepalm*</p>
<p>I don’t know why I keep overestimating my waffle iron’s capacity. We were gifted a Belgian waffle iron when we got married that lasted about a decade. When it died I replaced it with a traditional waffle iron. (this <a href="http://amzn.to/2nFKX3t">Cuisinart waffle iron</a> which is inexpensive and gets the job done. I would love to spring for this <a href="http://amzn.to/2BJSUa8">double Belgian waffle iron</a>, but…. storage space.)</p>
<p>It took me a while to get used to putting half as much batter in my new iron. Overfills ALL. THE. TIME. And a few years later I’m still doing it. Can anyone relate or am I just destined to have a crusty waffle iron my whole life?</p>

<p>Put them on a wire rack on a cookie sheet, and try not to overlap them too much. Then put them in your oven on the warming setting. It'll keep some of that fresh-from-the-iron crispness.</p>

<p>No, this isn't leftover cranberry sauce from Thanksgiving. (Our leftovers went the way of <a href="https://www.perrysplate.com/2017/11/paleo-orange-cranberry-bars.html">Paleo Orange Cranberry Bars</a>. Twice.)</p>
<p>I actually bought more cranberries (At Costco. *Facepalm* Triple batch it is!) to make some paleo <a href="https://www.perrysplate.com/2016/11/wassailed-cranberry-sauce.html">Wassailed Cranberry Sauce</a> so I could put it on these waffles. It was a round about way of getting what I wanted, but it was worth it!</p>
<p>And now I have over a quart of extra cranberry sauce for something else. But if we're being honest here, it'll probably end up on a couple more batches of these paleo gingerbread waffles.</p>
<p>I mixed the cranberry sauce with some whipped coconut cream to make a creamy sweet-tart topping for my waffles. If you can handle some dairy, I highly recommend using real whipped cream.</p>

<p>These waffles are on the sweet side because I was anticipating a more tart topping. If you decide to serve them with something sweeter you can hold back on the sweetener in the waffle batter.</p>

 	<li data-step-index="0" id="mv_create_491_1">In a large mixing bowl, whisk together the flours, chai spice, coconut sugar, baking soda, and salt.</li>
 	<li data-step-index="1" id="mv_create_491_2">Separate the eggs, putting the yolks into the bowl with the dry mixture and the whites in a separate, smaller bowl. (Don't mix in the yolks quite yet.)</li>
 	<li data-step-index="2" id="mv_create_491_3">To that bowl, add 3 eggs, applesauce, molasses, almond flour, and coconut oil. Mix it together only after you have added all of the wet ingredients.</li>
 	<li data-step-index="3" id="mv_create_491_4">Whip the egg whites using an electric hand mixer until soft peaks form.</li>
 	<li data-step-index="4" id="mv_create_491_5">Add the whites to the batter and GENTLY fold them in using a rubber spatula, scraping from the bottom and folding the batter over. The batter will be fluffy and aerated when you're done.</li>
 	<li data-step-index="5" id="mv_create_491_6">Cook the waffles in a heated waffle iron sprayed with non-stick spray (I like coconut oil spray) according to the manufacturer's directions.</li>
 	<li data-step-index="6" id="mv_create_491_7">Clean off your beaters and then use your hand mixer again to whip the coconut cream, if it's hard. Beat until it's smooth and soft. Stir in the cranberry sauce and set it aside until ready to use.</li>
 	<li data-step-index="7" id="mv_create_491_8">Serve the waffles with a dollop of cranberry cream and a sprinkle of pomegranate arils.</li>

			<p><p>Nat's Notes:<br /><br />1. You can find canned coconut cream in some grocery stores or online. If you have trouble finding it, you can use the separated cream from 2-3 cans of chilled coconut milk.</p><p><br />2. If you put the cranberry cream in the fridge for a while before eating it will harden again. I recommend just letting it sit out if you plan on eating soon. Or prepping it immediately before eating.</p></p>
