Roasted Eggplant and Caramelized Onion Pizza

This pizza made it into my top five all-time fav’s. It’s another Paula Deen recipe, so I shouldn’t expect any less. I even used the wheat pizza crust recipe she recommended, and its slightly denser texture supported all the toppings well. There are so many thing on this pizza it should be called “roasted eggplant-carmelized onion-roasted red pepper-bacon-goat cheese pizza”.

And Sophie liked it. She ate every part of it and loved it. She amazes me sometimes.

Roasted Eggplant and Caramelized Onion Pizza

Ingredients:

1/2 med eggplant, peeled and chopped
2 T olive oil
3 T butter
2 sweet onions, thinly sliced
1 c pizza sauce
1 1/2 c shredded mozzarella
6 slices turkey bacon, cooked and crumbled
1/2 c chopped roasted red peppers
1 c crumbled goat cheese
1 recipe whole wheat pizza crust

Directions:

Coat eggplant with olive oil. Spread in a single layer on a baking sheet. Bake at 400 for 10-12 min or until lightly browned; set aside.

In a large dutch oven/saucepan melt butter over med heat. Add onion, cover and cook for 30 minutes. Uncover, increase heat to med-high and cook, stirring frequently until caramelized; set aside.

Spread pizza sauce over crust; sprinkle with 1 c mozzarella cheese. Top evenly with eggplant, onions, bacon and roasted peppers. Sprinkle with remaining mozzarella and goat cheese.

Bake at 425 for 12-15 min.

Nat's Notes:
1. When I made the crust this time, I used 1 c whole wheat flour and 1 c white whole wheat flour and it made it slightly lighter and less "wheaty" tasting.
2. I made my own roasted red pepper by cutting one in half and placing it inside-down on the same pan as the eggplant. It'll need to cook about twice as long, until the skin has black spots. Remove from the oven, and place in an airtight bag for a few minutes. Remove and the peel should come off nicely.

    We FINALLY made this one for dinner, only I substituted mushrooms for the eggplant. I liked this different take on pizza, but W said he would've liked it better as a panini. Pizza is pizza, says he.
