Impossible Pie aka Coconut Custard Pie

Why I adore this pie…
1. 5 minute prep time — stir it all in a bowl and dump it into a pie plate.
2. It makes it’s own crust!
3. It reminds me of my grandma. And she’d gladly make one for me to eat all by myself.


Impossible Pie aka Coconut Custard Pie

From Grandma Henderson

2 eggs, beaten
1 c. sugar
3 T. melted butter
1 tsp vanilla
1 c. milk
4 T. self-rising flour/Bisquick
3 ½ oz flaked coconut

Mix well. Pour into 9-in buttered glass pie plate. Bake at 350 for 30 min. (Makes its own crust!)

    Hi Coco! Thanks! I love coconut as well :) Yes, I used sweetened coconut flakes. I should really update the recipe. This was posted way back when I was a newbie. I've gotten more precise since then. Enjoy!

    I just this week started putting coconut into my pancakes, and it is pretty much the same ingredients with different ratios. It is fantastic!

    Warning: This is a long comment. So I was craving dessert the other night. Normally I don't crave dessert all that often, but with some dietary restrictions because of my newborn, I'm craving desserts…specifically ones that have ingredients that I'm not supposed to have. Anyways, I got on here to pull up a zucchini recipe of yours and saw this on the popular posts side bar. I happened to have the all the ingredients, liked that it was a quick fix, and hoped that soy milk would be just fine as a substitute. I whipped up your bisquick mix, which is all I use now if I need something like that, and made the pie. I must tell you that as soon as I took one bite, I squeeled, did a little dance in the kitchen, squeeled some more, ran to tell my husband he was going to love it, and then ran back to dish some up. And then I proceeded to finish off what was left of the pie the next day all by myself. And I might make it again tonight. I'm in LOVE! THANK YOU!!! ~Lindsey

    A similar recipe is on the back of the Angel Flake coconut bag. I use the blender for everything except the coconut and also make it with Splenda, increasing the Splenda to 1 1/4 cups. It's my hubby's favorite!
